Tropical Chia Pudding

Tropical Chia Pudding

Add a little sunshine to your day with this healthy little gem. It's easy to make and stores well for up to a week in the fridge so it's handy to have on hand as a healthy breakfast or a snack in a pinch. I like to use the empty glass jars from  petit pot yogurt, they even come with re-useable lids!

400ml can          coconut milk


1/2c                     chia seeds


2tbsp                   honey or sugar


1tbsp                   vanilla


1                           lime (juice and zest)

  
Pinch                  salt                                                                                                           

1can                    crushed pineapple


1/2c                    toasted coconut

In a large bowl combine the first 6 ingredients. Divide into 8 single sized serving dishes. Now top each portion of chia pudding with some crushed pineapple and garnish with the toasted coconut. Cover and store in the fridge for up to 1 week.
