Shepherds Pie

Shepherds pie is a quick and easy weeknight meal...especially if you don't have to peel the potatoes! This is a simple recipe that's topped off with my Fluffy Mashed Potatoes. We often serve it with some Savoury Tomato Jam if we happen to have some kicking around in the fridge. Hope you like it as much as we do!

 

Generously serves 8.

1lb   ground beef (ground turkey) 

1      small onion (finely diced)

2      large garlic cloves (minced)

1       red pepper (diced)

2tsp horseradish

 

2c    frozen mixed vegetables

1/2   can cream of mushroom soup

1      handful of chopped parsley

salt and pepper to taste

 

Preheat the oven to 350 degrees.

Pop the first 5 ingredients into a large sized saucepot on medium heat. Brown the ground beef (or turkey) stirring every once in a while until it's golden brown with no sign of pink. 

Stir in the mushroom soup, the frozen mixed vegetables and some salt and pepper. Cook until heated through.

Now, evenly spread out the meat mixture into a large shallow ovenproof dish. Top with mashed potatoes, and put in the oven for about 30minutes. 

Tip- I sometimes garnish with shredded cheese before baking.
