Spicy Oven Roasted Chicken

The bold robust flavour of this chicken will have you licking your plate! In this recipe I've used Chicken breasts but it's equally delicious with chicken legs or thighs...you'll just have to adjust the cooking time. Try this with my Curried Wild Rice and my Pears and Carrots Caramelized in Honey. It's a dinner worthy of royalty but it's ridiculously easy to prepare!

Serves 4.

4               chicken thighs (I like bone in, skin on)

2               garlic cloves (minced)

2tsp          honey

1tbsp        dijon mustard

2tsp         curry powder

2tsp         paprika

2tbsp      olive oil

2tbsp      chopped fresh parsley

1/2           lemon (juice).

Toss all the seasonings in a bowl and give it a stir. Now simply rub the mixture all over the chicken breasts and place them in an oven safe baking dish. Let them marinate anywhere from half an hour to overnight.

Preheat your oven to 450 degrees. Take the chicken out of the fridge and let it come to room temperature.

Once the oven is preheated pop the pan in the oven for 20 minutes or until the juices run clear.

Let rest for 5 or 10 minutes, then serve. Easy Peasy!
